Aims, contents and method of the course

ECTS: 2.0
This lecture imparts knowledge on the chemistry of aroma compounds, their exact definition, aroma analysis, authenticity problems, classification of flavour compounds, e.g. roasted flavours, Maillard reaction, flavour of coffee, flavour of wine, etc, off-flavours, flavour modifiers and enhancers, production of aroma compounds, aroma-additives to food and drug preparations, basics of the sense of smell and taste.
