Quality of food of animal origin in general, definition, quality characteristics, quality deterioration and spoilage.Meat and meat products:Meat: composition of muscle tissue, post mortem changes and deteriorations, quality deterioration and spoilage, characteristics of carcasses and their measurement, changes during heating.
