Aims, contents and method of the course

Die moderne Vorratshaltung basiert zu recht oftmals auf alten Traditionen und Überlieferungen. Warum auch vernachlässigen, was sich über Jahrhunderte bewährt hat? Vorratshaltung trägt zu einer gesunden Ernährung und einem schonenden Umgang mit wertvollen und teuren Lebensmitteln bei. Eine Kombination aus dem Wissen unserer Vorfahren mit moderner Technik: (bio-)chemische Methoden wie: Zuckern, Salzen, Säuern, Fermentieren und physikalischen Methoden wie: Trocknen, Dampfentsaften, Pasteurisieren.

Minimum requirements and assessment criteria

Bei erreichen von 60 % der Punkte der maximalen Punktezahl wird die Prüfung als positiv beurteilt.
